In a medium mixing bowl, combine the oats, Naturlax, cocoa powder, baking powder, cinnamon, and salt. Using another bowl, combine the coconut oil, mashed banana, and vanilla. Then stir in the maple syrup.
Fold 1/3 dry ingredients into the coconut oil mixture at a time. Then, add in some of the chocolate chips and gently fold them into the mixture. Let the dough chill in the fridge for at least 20 minutes.
During this time, preheat the oven to 325•F and line a baking sheet with parchment paper. Use an ice cream scoop to round up the dough, and push down on the balls to form the cookie sheet.
Top the dough with the rest of the mini chocolate chips and bake for 8-10 minutes. Let the cookies cool before enjoying.
